Polygel PS 30

POLYGEL® PS 30 is a range of technological processing aids with combined stabilizing action, obtained by exploiting the action of PVPP and controlled‑moisture silica gel. They are used as a single treatment for beer stabilization, either in the maturation tank or during filtration.

STABILIZING ACTION

The excessive presence of polyphenolic substances in beer leads to haze instability and a pronounced deterioration of flavour. POLYGEL® PS 30 forms very stable complexes with the polyphenolic substances of the beer while at the same time adsorbing protein substances. The stabilizing action of POLYGEL® PS 30 is expressed, on one hand, by the presence of PVPP, which adsorbs polyphenols and simple phenols (protoanthocyanidins or anthocyanidins), and on the other hand by the silica components, which exert a selective adsorption on low‑ and medium‑molecular‑weight proteins, perfectly completing the stabilization.

ADVANTAGES

POLYGEL® PS 30 is effective even with very limited contact times;

• it is formulated according to specific stabilization requirements with 30% PVPP and 70% controlled‑moisture silica gel, given the significant polyphenol content in malt;

• does not alter the colour, aroma or taste of the beer while the foam remains stable.
