Barley flakes are obtained from the grains of Hordeum vulgare, a member of the Poaceae family. The grains are cleaned, graded, flaked by steaming and dried. The flakes are yellow-brown with white veins. The flakes should not taste rancid or bitter, but rather pleasant and typical of cereals.
